Cream of Something Casserole by Deahna Romero

My fifth child, Deahna King Romero, and mother of a one-year-old swears by this casserole. Her Filipino husband, a rice eater since birth, loves it too. So, enjoy this easy and tasty dinner on a night when you aren't sure of what to serve the family.


Cream of Something Casserole--makes six servings by Deahna King Romero.


one pound cooked and drained ground beef or a Costco 1- and 1/2-pound pack of organic beef cooked and drained

1 cup uncooked white rice

2 cups water

1 can of Cream of Something (or whatever you have in your pantry)

chopped carrots--as many as you want to add

chopped onions--same thing, use what you have if you are an onion lover

grated cheese--as much as you want


Mix all of the above, put in a casserole dish, and cover the top with foil or a glass top—Bake at 350 degrees for 90 minutes. Remove lid and sprinkle with grated cheese, then cover the top again and let the grated cheese melt. Enjoy with something else handy such as a cut apple or easy salad. Captain Mike (Deahna's Dad) rates this as an 8.5, which is high since his highest is only a 9. Thus, with a can of something on your shelf, give this dish a try on a night when you want to keep life simple!
