Maggie's Terrific Black Bean Soup with Sausage by Margaret Reichenbecher and M.Wild King

My good friends put up with a lot from me because, for fifteen years, I have been bilking them for blog ideas. Thus, when Margaret Reichenbecher, or Maggie, mentioned in a text that she was serving her family black bean soup, A FAMILY FAVORITE, I knew I had a winner. And it is. Enjoy!

Maggie's Terrific Black Bean Soup with Sausage


Prep Time: 5 minutes

Cook Time: 25 minutes

10 slices of bacon, finely chopped

2 medium onions, chopped

6 garlic cloves. minced

1 (14 1/2 oz) can reduced-sodium chicken broth

1 1/2 cups canned chopped tomatoes

2 Tbsp. ketchup

2 tsp. Worcestershire sauce

1 Tbsp. chili powder

4 (15 1/2 oz.) cans of back beans, drained but not rinsed, salt and pepper to taste

1 bunch cilantro, picked from stems and coarsely chopped

1 Kroger Dinner Sausage, cut into 1/4 inch slices

juice of 1/2 lime

for serving: sour cream and shredded cheddar cheese


Cook the bacon over medium heat in a large, heavy pot for 5 to 7 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook for about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire sauce, and chili powder. Stir in the beans; turn up the heat and bring to a boil. Adjust the heat so the soup is bubbling gently, and cook for 10 minutes—season with salt and pepper. Stir the cilantro and the sausage pieces into the soup. Cook until the soup is thickened, about 5 minutes more. Stir in the lime juice. Serve with sour cream and cheese. Refrigerate any leftovers. Serves 8 to 10.
