Mel is an accountant and a very busy fellow, especially around tax time. Thus, an easy, quick dinner is his choice and mine, too. This meal will remind you of your Scouting days, when these ingredients were rolled into aluminum foil and buried in a bed of campfire coals for about 45 minutes, then opened steaming hot and eaten directly from the foil. But this time, Mel has brought this memorable dish to your kitchen with ease. Enjoy.
Mel's Hash by The Frugal Catholic
1 pound of ground beef
1 finely diced onion, or as much as you want
several finely diced carrots, or as many as you want
1 finely diced potato
salt and pepper to taste

Cook the ground beef, leaving the oil in, then add the onion and brown for about five minutes. Do the same with the carrots, then the potatoes, and add salt and pepper to taste.

Now cover and let simmer in its own juices for about 20 to 25 minutes, stirring occasionally, or until done to your liking.
As a P.S. note, most little ones like meat and potatoes, but ours doesn't do carrots just yet, so hold off on the veggies as needed. Also, it can be served over a bed of brown rice if you'd like more fiber and good stuff. Captain Mike likewise mentioned that soy sauce or Worcestershire would be a good addition, but truthfully, I like Mel's Hash as is. Simple!
